  • 1 Tbsp vanilla extract
  • 1 vanilla bean, seeds scraped
  • Confectioner’s sugar, for dusting

Equipment:

  • Small bowl
  • Medium saucepan
  • Candy thermometer
  • Stand mixer (or hand mixer)
  • 13×9 inch baking pan

Instructions:

  1. Bloom the Gelatin: In a small bowl, combine gelatin with 1/2 cup of cold water. Set aside to bloom while you prepare the syrup.
  2. Make the Syrup: In a medium saucepan, combine the remaining 1/2 cup water, sugar, agave nectar (or corn syrup), and salt. Cook over medium heat, stirring until sugar dissolves.
  3. Boil to 240°F: Increase heat to high and cook syrup until it reaches 240°F on a candy thermometer. Be careful not to let it boil over. Remove from heat.
